Here is a wedding cake for a small wedding tomorrow, rather retro with a 50's ribbon, a self coloured monogram and a line of purpley blue roses. I like this cake.

Matylda's mum sent me a lovely note today:

Hiya Melanie,
I have just realised I did not email to say thank you for Matyldas Christening cake.
Everyone commented on how gorgeous it was and when I finally brought myself to cut it, they couldnt believe how yummy it was.
You have converted me into a cake lover now, well only your chocolate one!
We have her first birthday coming up so I will be in touch soon for another gorgeous creation.

As the chocolate cakes with the cigarillos around and ruffles on top do not have to be sugarpasted and then be allowed to set for 24 to 48 hours before decorating it is possible to make these last minute. I have sometimes done them with 24 hours notice. Below are examples of cakes I could do last minute, and the wedding cake is one I actually did do last minute, when the original cake maker let the bride down. The birthday cakes, which are 8" across at the bottom and up to 12" across at the top, and 8" high are £60.

These metal cake stands are a very safe option for tiered cakes, especially for those brides who are taking the 'Do it yourself' option and either getting a family member to make the cake or buying them from the supermarket. With these stands there is no possibility of cakes collapsing into one another or sagging at an alarming angle, examples of which we have all seen on 'amusing' video clip shows, when the setting up of the cake has been left to someone inexperienced in this matter.

This afternoon we have been taking photos of all the cake stands I have for hire. I have quite a lot really; 4 different cupcake stands, 5 base stands, 2 silver plate and 2 silver plastic and one gold plastic stand, and 3 3-tier metal stands. I also have a 4-tier metal stand that belongs to the Chemsford Sugarcraft Guild that I can hire out on their behalf. The old photos don't really show what they look like so in the next few days hopefully these photos will replace the old ones that are rather blurred, or where the stands are obscured by the cakes on them.

I thought this was a lovely arty photo, of a tray of vanilla buttercream cup cakes with edible gold stars and glitter, somehow informal but elegant at the same time. These were delivered to Greenwoods last week.

As the last picture of a two-tier stripey cake had such a lot of visitors I thought I would upload another. The stripes on this one are a lot wider, and are in the colours of the love hearts which are the other theme of the cake.

Birthday Cake with Sugar Carnations

Carnations were the first flowers I learned how to make when I started cake decorating classes in 1989. I still enjoy making them, and indeed most flowers. Roses are the most requested flower, followed by calla lilies, gerbera and moth orchids. I can make practically any flower in sugar including paeonies, sweet peas, freesia, sunflowers, muscari, daisies, and oriental lilies. Just ask, I'm sure that I have got a picture of one I have made at some time in the last 20 years.

Owl Birthday Cake

This is a really sweet birthday cake I made last week. The brief was 'don't cover the cake in sugarpaste' as the client felt it was rather artificial. An owl leant itself to chocolate cake and chocolate ganache, I felt, with some sugarpaste details added. It is a very simple but effective design.

Cakes with love heart sweets on are very popular. I have made several different ones, some of which are pictured below.

Because love hearts are sherbet type sweets they must be stuck onto cakes at the last minute, otherwise they absorb the moisture from the royal icing used to stick them on the sides of the cake and go all blotchy. I attach them at the wedding venue, or on the morning of the wedding before the cake is delivered.

If love hearts are to decorate the tables in a marquee, where it may be damp overnight, they should, again, be placed at the last minute, and not the day before.

Very delicate sugar flowers with some ivy, lily of the valley and beads on nylon filament make a really dainty decoration for an 80th birthday cake that can be treasured as a keepsake.

Birthday Cake with Spray of Dark Red Roses

Here is a large birthday cake with red sugar roses, and the blossoms I described how to make yesterday. This is a 12" square and will feed up to about 100 guests. I have been experimenting with making beaded decorations to go in sprays, for, although they can be bought, there is a limited range, and if I make my own I can match any colour scheme. Here I have just used large pearls and tiny red glass beads.

And instead of a sugar ribbon round the base I have put dark red blossoms all round to tie in with the white blossoms on the spray of flowers.

Birthday Cake with Spray of Sugar Flowers

During February, before the wedding cake season really gets busy, I have been amusing myself making pretty birthday cakes. This one has a spray of red roses, tiny calla lilies and some delicate blossoms.

The blossoms are made by taping 3 glass stamens together and then threading them through a sugar blossom. Then I tape 3 blossoms together to make a cluster. These make excellent fillers to balance out sprays of flowers with more dominant blooms, like roses, or calla lilies. However, they can be more time consuming than actually making a rose or calla lily.

My husband has spent 2 months revamping my website to make it look neater. It launched last night, so fingers crossed it will work without a hitch. I had my first enquiry via the new form within a couple of hours so it must be working okay.
