I loved making this cake last week. It was huge, a 10" cube cake, taking up a 16" cube area. It was all made of my yummy chocolate fudgy moussy cake and was big enough to make dessert for 150 people to celebrate Andrea's 40th birthday. Not only was the cake all edible but so was the retro styling mousse and the cassette tapes.

Susan and Owen had a cherry blossom theme for their wedding at Braxted Park in April, so instead of roses or calla lilies on my 'helterskelter' cake they went for cherry blossoms. I made white chocolate cherry blossoms in a mould and dusted the edges with edible lustre colouring dusts, and then grouped them on the cake. The bride and groom were delighted:


A huge thank you for helping to make out day so special. You made us an absolutely spectacular cake. Our friends and family haven't stiopped talking about how beautiful it looked and how delicious it was. We can agree with that. ... You are a very talented lady and we will happily recommend you to anyone."

Receiving such a lovely note made my day on Thursday too.
