20131022-Black & White roses cascade 1.JPG

This cake, which I made for a wedding at Boreham House in Essex in June was a wopping 5 tiers, with a cascade of black and white sugar roses, with the edges dipped in edible black glitter. It was a very stylish, statement cake. I love the way wedding cakes have a background of the grounds at Boreham House, thanks to the big picture window that frame them.

This very chocolatey 2-tier birthday cake was made for a regular client who is very fond of my chocolate cake. It was for dessert for the party shared between roughly 50 guests, but as the cakes were 12" and 10" square there was plenty to go round. This style of cake is a bit of a signature for me, recognisably my style, and really does have a wow factor on the buffet table.

This 12" square sponge cake was for the 50th birthday of a swimming teacher. I made the large 50 out of a marbled greeny/blue sugar paste and then spread piping gel on it to give a water effect. The cake drum was covered with the same sugarpaste while the cake was left white for contrast. There are 8 little swimmers doing various strokes, or just hanging on the side of the pool having a chat. It was rather sweet and effective.

These cards are made of a sugar medium called pastillage and are hand painted using food colouring. They take ages and are a labour of love, but it is very therapeutic.

This pretty 2-tier cake with a pink sugar ribbon and bow over the top of royal icing stencilled sides was made for a wedding at The Reid Rooms in Margaret Roding a couple of weeks ago. The bride provided the diamante initials and hearts for the top and those on the sugar bows. It was all carrot cake inside. My favourite.

I was so excited about my lace rose that I posted the picture on the day I delivered the cake. If I had waited one more day I would have had this feedback to add:

This cake I have just delivered to Channels Golf Club. The theme was lace and the bride came up with a new challenge for me. She wanted a few roses that were lacy. So I did the outer petals of a few of the roses in sugarveil lace over sugarpaste. It looked really good, a sort of 3-d collage effect.

This birthday cake was for a 50th birthday party at Stock Brook Manor a few weeks ago. The design was taken from the invitation which was black but had a purple border and a pair of glittery stilettos with the 'Fifty and Fabulous' inscription. I simply made the design into a 3-d one, put a sugar ribbon and bow round the sides and added the pearls to link the design elements together.

Lorna's husband arranged it all as a surprise, what a lucky girl.

He sent this e-mail about the cake:

Hi Melanie

The cake was a great success and your design fitted the 'theme' perfectly.

This was the last cake I made in August, so a month ago now. It is 5-tiers of various flavoured cake, with an ivory sugar drape running from tier to tier, caught on each tier with a spray of mocha coloured sugar roses, available now in a fresh rose, and with a mocha coloured ribbon round the base of each tier. Each rose had a diamante in the centre. It was completely coincidental that the cake matched the background drapes so well.

The cake was for a wedding at Prested Hall and the bride was delighted. The very next day she sent me an e-mail:

Dear Melanie,

Thank you so much for the amazing wedding cake that you delivered to prested hall for our wedding yesterday, it fit in beautifully with the venue and our theme and exceeded our expectations it was beautiful and most importantly delicious! Everyone commented on it!

Thank you for adding an extra wow factor to our big day
