This was a huge chocolate cake for a special birthday. Three layers of chocolate cake, drizzled with orange juice and Cointreau, filled with ganache buttercream and orange curd, wrapped with Belgian chocolate cigarillos and topped with plain chocolate ruffles and chocolate dipped strawberries.

This was a wedding cake I made last week for a wedding at Crondon Park in Stock, Essex. It was a busy week, with 4 cakes for the Saturday, but this one, unusually, was all fruit cake, which meant I could bake it ahead of time and ice and decorate it at my leisure, rather than being under time constraints as you are with sponge cake.

The groom sent me a lovely message:

"Dear Melanie,

Thank you so much for the cake! It was gorgeous, and made it hard to want to cut it! Glad we did though as it was absolutely amazing eating too. Even had a couple of pieces for breakfast the next day!"

This 60th Birthday Cake had quite a few elements, with 2 tiers of sponge cake that looked like gift boxes, a diamante 60 with butterflies and stars on wires, a matching handbag and shoe, all in sugar modelling, with sugar ribbons and bows and a banner.

This was for a birthday celebration at Burstead Golf Club, in Essex on Saturday.

Annette phoned me this morning and said:

"Thank you so much for my birthday cake on Saturday. I was absolutely thrilled with it and everyone said how lovely it was. It was marvellous."

This cake was for a wedding at the beginning of February at Crondon Park in Stock, Essex. The white sugar roses had navy diamantes in the centre and a little bride and groom (below), made of sugar and dressed the same as the real bride and groom, stood at the base of the cascade of sugar roses.

This was an unusual wedding cake request. It is a 4-tier square cake with sugar strips wrapped round the tiers and fresh gypsophilia around the ledges. I thought it was much prettier in the flesh than in the photos. This was for a wedding on 1st February at Pledgdon Barn in Henham.

I was inspected on Tuesday, by Chelmsford Environmental Health, due to having changed premises, and was awarded 5, the highest score available. I await my sticker to put in my door.

I have uploaded this cake at Veronica's request. This was the birthday cake I made for the husband of the Choir Director of Chelmsford Community Gospel Choir. Colin had just won Songs of Praise Gospel Choir of the Year, so it was a double celebration. Chocolate orange cake inside.

I love folk art and, knowing how popular bird cages are as a theme for weddings at present, I took a bird cage as the basis for a cake design, chose a pretty sky blue colour for a background and then piped a design in royal icing based on folk art with a bird as the main theme. The heart on the top tier has two little birds above it. I can imagine this would also work with a white background and lots of colour in the piping. The cage could have fresh flowers inside to mirror those on the tables at a wedding.

I made this in December for my lovely customer who always has parcel cakes. I loved her choice of colour scheme this time, and particularly enjoyed making a striped sugar bow.
