I usually wrap these 'helterskelter' cakes in white chocolate, but this particular bride wanted the cake to be pure white so I used sugar paste. The sugar roses are edged with a sparkly edible shimmer. It was a for a wedding at Crondon Park in Essex.

This cake was an enormous cake, although it is not obvious from the picture. It was for an engagement party that was bigger than most weddings. There was a wintry theme to the party, hence the icing sugar dusted over to look like snow. Layers and layers of chocolate cake, with ganache and orange curd between and milk chocolate wrapped round and fanned out on top.

This is the second cake I made for the Essex Record Office. It is to celebrate the 75th and 60th anniversaries of the Essex Record Office and the Friends of Historic Essex respectively. It was designed by them and the sugar scroll is a 'court roll'. The dots at the side were to help them to cut up to 144 equal sized pieces of cake. They had a celebration at Ingatestone Hall in Essex.

This was a 4-tier sponge cake iced in white with a cascade of large roses using white and burgundy sugarpaste, with diamantes in the centre. It was for a wedding at Ashwells Country Club near Brentwood in Essex.

This wedding cake was for a wedding at Newland Hall in Essex on Saturday. It has ivory icing and ivory ribbon round the base of each tier, with large handmade ivory/cream chocolate/sugar roses cascading from the apex to the foot of the cake. The brief was to introduce some gold glitter to the roses, but instead of actual cake glitter, which although non-toxic has had a bad press recently, I used gold magic sparkles flakes broken up and scattered on. I thought it had the effect of gold leaf and looked very sophisticated.

This wedding cake was for a wedding cake at Crabbs Barn, Kelvedon, in Essex last Saturday. The weather was lovely, bright and sunny, perfect for Nick and Deborah's big day. The cake was two tiers of chocolate and one of vanilla sponge, covered with Belgian chocolate cigarillos and topped with over 1.6 kilo's of Thornton's chocolates.

Well two cakes really. The 8 was a fruit cake and the 0 was sponge. I made sugar freesias and primroses, both in yellow, and yellow and white daisies. It was a very fresh, spring like cake.
