This was a lovely commission, and I thoroughly enjoyed making this little dog. He has a rice crispie and marshmallow base, covered in fondant with the fur piped with royal icing. It is quite a doggy week as I have also made a German Shepherd to go with a bride and groom model for a wedding cake next week.

This simple and elegant wedding cake was for a wedding at Mulberry House near Ongar. Three tiers and three different flavours, with a sugar drape to look like fabric, and purple and white sugar calla lilies. The bride and groom sent a lovely card: "Thank you for making our special day perfect. We loved the cake."

Hannah wanted a Giant Snickers Bar as her 15th Birthday cake. She found a youtube site with instructions which we followed. This is NOT cake. It is a layer of peanut butter flavoured nougat, peanut and caramel, and milk chocolate all the way round. I haven't cropped the pictures as you can't get any idea of the scale if I do. It is 13" long, 4.5" wide and 2" high. Boiling the cream and sugar for the caramel, and the sugar and milk for the nougat destroyed my digital thermometer! It looks fabulous and tastes just like a Snickers/Marathon bar.

Christmas Cake - this was the Christmas cake that my daughter, Hannah, and I, made for my in-laws for Christmas. Hannah designed it as she wished to try her hand at royal iced run outs. I royal iced the cake as she was not brave enough to try that, but she made the templates for the holly leaves and decided on a green outline and white inners and she did very well at making them. I piped the lettering in the style she chose

I had a lovely thank you card yesterday from the couple for whom I made this wedding cake.

"Dear Melanie, Thank you so much for our beautiful cake you made, it was absolutely stunning and just perfect and even more it tasted amazing. Thank you so much and can't wait for an excuse to use you again."

The cake was 4 different flavour tiers, with ivory icing layered with white lace made from sugar to match the bride's dress. The edges had royal iced piped beading and there were fresh roses between the tiers to match the table arrangements. It was so tall I took a spirit level when setting it up to ensure it would not lean.

This cake was for a wedding at Boreham House on 9th January. Four different flavours of cake with sugar sprays of cream roses, variegated ivy and miniature pine cones. The sugar drape, which swept from tier to tier was covered in sugar lace. The fountain and cake stand are very popular this year as well, several booking have been made already.

The bride was delighted with her cake:

This was my last wedding cake of 2015, for a New Year's Eve wedding at Crondon Park in Stock, Essex. With a colour scheme of gold and chocolate brown I put fresh cream roses with some gold colouring, yellow gold fruit, and some chocolate orange segments. All dusted in icing sugar for a wintry feel.

Not had enough chocolate over the Christmas holidays? Here is the perfect remedy: 2 tiers of chocolate orange cake with milk chocolate cigarillos, maltesers covering the bottom tier, and a little nod to healthy eating on the top tier with fresh fruit.

No icicles or snow yet this winter, here in Essex, but that was the theme this bride was after, so we made brittle white chocolate shards, with gold ting-ting spiralling from the top.
